Description
Milk Shark — Paal Sura in Tamil — is a small shark with soft, boneless white flesh (just cartilage, no fine bones), a South Indian and Sri Lankan delicacy famous above all for sura puttu.
Loved across communities
A traditional favourite in Tamil and Sri Lankan Tamil homes, often chosen for children and elders because it has no bones. Paal Sura carries a lot of nostalgia — it’s the taste of a grandmother’s kitchen.
Popular dishes
The classic is sura puttu — shark meat cooked down and scrambled with coconut, onion and spices — alongside a sura fry and a peppery sura kuzhambu (curry).
Recipe ideas
Cook it in a mild fish sothi or a Goan curry. More in our seafood recipes.
