We clean it to order — whole, or butterflied and ready for the pan. Every order is prepared by hand, then vacuum-packed in an individually sealed bag and dispatched fresh on the day it leaves us, at £6.99 per kg.

Yes — Ayala in Malayalam, Aylai in Tamil, Bangda in Goa and Maharashtra. It’s all the same oily, flavourful mackerel.

What does it taste like?

Rich and full-flavoured — an oily fish, which is exactly why it stands up to bold spice and tangy tamarind.

Does it have bones?

It has a central bone and some fine ones. Butterflying it (which we can do) makes it easier to eat.

What’s the best way to cook it?

A crisp fry or a tangy coconut/tamarind curry are the classics. Its oiliness keeps it moist and full of flavour.

How is it packed for delivery?

Cleaned to order, vacuum-packed in a sealed bag and sent chilled, so it arrives fresh and clean with no leaks in the box.
